Colours and flavour focus for food scientist meeting

At this year's annual IFT meeting later this month flavour and colour firms will be dishing up their latest ingredients for food and beverage makers. Here we dip into a few examples.

Danisco: the Danish ingredients firm has released a new series of flavours, Commonsense, based on sensitive real-time and quantitative measurements of the release of volatiles responsible for human taste perceptions.

Available in natural, nature-identical and heat-stable formats for beverage and dairy applications, the company claims product development times are reduced, product lifecycles can be extended and "consumer loyalty is enhanced."

At the IFT Danisco will show four fruit flavours - peach, raspberry, apple, and strawberry - developed for flavoured waters.

Ottens Flavors: this US firm will highlight six prototypes at the show to include, Citrus Chili Marinated Chicken Strips with spicy, sweet and savoury notes, Crispy Rotisserie Chicken Nuggets, Chocolate Banana Triple Layer Protein Bar that features caramel swirled with taste of ripe bananas dipped in chocolate.

Fortified juices Tropi-Tango Punch and Jungle Berry are paired with fruit flavours and acai juices.

Treatt USA has expanded its Treattarome portfolio of flavour distillates. Tea Treattarome Iced has been developed as an alternative to tea concentrates and powders for use in particular in ready-to-drink teas.

The company claim the freshly brewed aroma, robust back notes, and "natural astringency"guarantee an authentic iced tea flavour.

Juicy Tangerine WONF flavour enhancer is blended using raw materials and fortified with natural citrus factions.

Additions to the Exberry range of fruit and vegetable-derived colours will flow more easily, dissolve faster, and have less dusting, claims colour supplier GNT USA, presenting at the show.

The company adds that Shade Sunset Powder gives a wide spectrum of red colour hues, moving from pastel pink to brilliant red colour.

Potential applications include protein mixes, sports bars, dry mix beverages and tablets.

Number one caramel colour company D.D.Williamson will show at the IFT colour blends that combine caramel with other natural colours to enhance the visual appearance of beverages, confections and dairy applications.

Wild Flavors will highlight use of its Colors from Nature range, produced from raw materials such as fruits, vegetables, and other botanical sources.

The IFT meeting , that brings together food technologists from all over the world, takes place on July 16 to 20, in New Orleans, US,
