ADM collaborates with Nuseed Americas to develop sorghum flours

Archer Daniels Midland Company (ADM) has developed two ‘premium’ sorghum flours through collaboration with US seed firm Nuseed Americas.

ADM’s two flours – Harvest Pearl White Sorghum Flour and Havest Pearl White Whole Grain Sorghum Flour – have been made using sorghum from Nuseed’s branded supply chain Wholis.

Nuseed claims its sorghum is a premium grain given the strict quality and specification checks on the supply chain, premium genetics used and closed-loop network of US growers.

“As we promote awareness of sorghum in the food chain, we understand the necessity for food companies to have a consistent supply of grain, bred specifically for use as a good product. The Wholis branded sorghum supply chain ensures a consistent, uniform, gluten-free supply of premium quality sorghum grain,”​ said Nuseed commercial director Tim Birkel.

Plugging a market gap and sparking a sorghum boom

ADM said its two new sorghum flours will plug a market gap as the grain is often overlooked in food applications.

BakeryandSnacks.com recently spoke to an Italian researcher who headed up a study into sorghum who agreed that industry use of the grain remains nascent.

Traditionally, sorghum in Western countries is better known as a grain for animal feed. But food-grade sorghum is cultivated across the globe and many scientists agree that the grain is brimming with potential for foods, particularly in the baked goods sector.

“Sorghum provides a strong nutrient profile and is gluten-free. In addition, Nuseed sorghum is highly versatile due to its unique light color and neutral flavour,”​ said Brian Forster, general manager of wheat starch and protein for ADM.

“…ADM is committed to helping our customers meet the growing demand for whole-grain, gluten-free foods,”​ he said. 

Nuseed said that its experience in sorghum breeding and agronomics will complement ADM's technical, milling and distribution capabilities.
