Sensient Flavors makes exotic 2011 flavor trend predictions

Sensient Flavors has pinpointed a number of unusual flavors as up-and-coming trends for the year ahead.

The flavor company said it came up with its predictions by filtering trends from “the broad, macro level down to the flavors themselves.”

 

Its predictions are heavy on exotic flavors, including Ceylon cinnamon, which it says is more complex and less sweet than cassia cinnamon; berbere, an Ethiopian spice mix made from cayenne pepper, allspice, cardamom, cloves, fenugreek, ginger, black pepper, and salt; the tangy berry flavor of hibiscus; the yumberry, known officially as yang mei, a tart and sweet fruit native to China; a Peruvian vegetable called yacon, which it compares to an apple; and aguaje, a bright orange sweet fruit also native to Peru.
