The Color Purple: DDW to launch natural color from purple corn at the IFT show

Natural colors specialist DDW will be launching a new food color at the IFT show that will deliver a vibrant red to purple hue, depending on pH, with a “clean, neutral taste.”

Derived from a non-GMO purple corn hybrid cultivated in the US, the coloring can be listed on food labels as ‘purple corn juice color’ or ‘colored with vegetable juice’ and is produced via water extraction at DDW’s plant in Port Washington, Wisconsin.

The anthocyanin-rich coloring is suitable for use in juice drinks, energy/sports drinks, some enhanced waters, fruit preparations, yogurt, ice cream, salad dressing, snacks, cereals, and confectionery products, said DDW, which received the NEXTY award for 'Best New Ingredient' for a prototype of the color at Expo West in March.
