The research by Professor Jan A Staesen at Leuven measured salt intake by urinary discharge. He finds that low salt intake increases the risks of hypertension and coronary disease by uo to 46%. High salt intake reduces the risks.
Too little salt also increases the risks of food deterioration and can result in food poisoning.
