Whey Protein Isolates
New whey protein isolates, Hilmar™ 9400 WPI and Hilmar™ 9410 Instantized WPI, are ideally suited for foods and drinks wanting a positive nutrition advantage. Manufactured by special cross-flow filtration and patented fractionation process, Hilmar WPIs have unique functional benefits. Acid and heat stability allow them to withstand the rigors of juice fortification and pasteurization. Their thin-as-water viscosity make light beverages, such as fortified waters and isotonics, possible. Hilmar™ 9400 WPI is clear in liquids, and its clean flavor is equally transparent in formulations. Hilmar™ 9410 Instantized WPI has spoon-stirrable dispersibility for dry mix applications.
Hilmar™ 8800 alpha-lactalbumin enriched 80% WPC is designed to help manufacturers take advantage of alpha lactalbumin’s health benefits, such as mood support, mineral absorption and regulation of gut micro flora, along with the expected functional benefits of whey protein. Providing critical amino acids for energy and health, Hilmar™ 8800 also gives an extra pop of phospholipids for their essential roles in cellular structure and activity. With its heat and acid stability, high solubility and low glycemic load, Hilmar™ 8800 is ideal for humanized infant formulas, sports or health drinks, food bars and supplements.
Capitalize on the popularity of “add n’ shake” nutritionally-enhanced dry mix drinks with these instantized whey proteins. The result of our pioneering work in large scale continuous agglomeration, they provide consistency in the most critical product characteristics – dispersibility and flavor. Hilmar™ 8010, an 80% whey protein concentrate with excellent hydration, has a clean, refreshing palatability ideal for more flavor-sensitive dry mixes. Hilmar™ 8360 is an instantized whey protein hydrolysate that’s been agglomerated and surface treated to provide excellent dispersibility. It is moderately hydrolyzed to produce a mixture of peptides and free amino acids for enhanced health benefits in more nutritionally demanding mixes such as those for athletes, weight control and medical diets.
All Hilmar whey proteins deliver fortification and function. They are complete proteins with all the amino acids humans need to help grow and repair muscle and connective tissue, synthesize enzymes and supply energy. In fact, during prolonged exercise, oxidation of whey protein’s amino acids – mainly BCAAs, can provide 10% -15% of the total energy required. They also appear to increase the feeling of satiety, or fullness, more than other proteins such as casein.
Hilmar whey proteins are multifunctional and can reduce the need for emulsifiers, stabilizers or structure-forming ingredients. They are soluble across the pH range, unlike casein, MPCs and soy which fall out of solution at many points along the scale. Heat stability, gelation, film forming, aeration, and browning are also contributions you can expect from Hilmar whey proteins.
