Food makers build in health ‘from the ground up’

Reformulation is not the only route to healthier foods and beverages, as manufacturers increasingly are seeking to build healthy products from the ground up, according to a research chef at IFF.

Speaking to FoodNavigator-USA, International Flavors and Fragrances (IFF) research chef David Horrocks said that many food makers have made significant advances in salt, sugar and saturated fat reduction – and some have already met targets for stripping out these ingredients. As a result, food manufacturers are now looking to build in health and wellness in new product formulations, he said.

However, healthy products do not need to be bland, and flavor can be added in a number of ways, including through flavor-boosting cooking techniques, or by adding herbs, spices, acidity, texture, or natural flavor enhancers.
