Natural blue and green
Anthocyanins are blue at pH 7, but in general, natural blue and green food colors are a big challenge in the US market, as the FDA has not (yet) approved natural colors such as spirulina or gardenia, which are permitted in some other markets, says global application scientist Jennifer Brown.
Meanwhile, the FDA currently only allows Copper chlorophyllin (green) in some citrus beverages.
