A handful of algal protein
When at a conference full of food scientists, never turn down the chance to sample their wares. In this case, Solazyme’s senior manager of technical sales and foodservice, Joyce Baird, was sampling the firm’s whole algal protein and whole algal flour for anyone willing to hold out a hand. “Really the only challenge for formulating with either ingredient is the color,” Baird said of the almost mustard yellow hue to each ingredient. Algal flour is a lipid-rich, multifunctional ingredient that can replace fat or boost mouthfeel in applications ranging from powder blends and bars to beverages. The protein, comprising 50% protein by weight and 15-20% dietary fiber, is vegan, non-allergenic and rich in fiber, healthy fat and micronutrients. “Tastes a little like potato chips, doesn’t it?” Baird said. Yep, that’s it. Who would've thought a handful of algal protein powder could make you crave a bag of chips?
