2014 SPECIAL EDITION: HEALTHY AND FUNCTIONAL DAIRY
Cow's milk alternatives
Continuing her top healthy and functional dairy trends, Sabin pinpointed cow's milk alternatives, camel milk and goat's milk.
Traditionally consumed in the Middle East, Asia and North Africa, camel milk is now becoming popular with health-conscious consumers in the West.
Earlier this year, the founder of US camel milk firm, Desert Farms, went as far as saying camel milk would be the country's next 'superfood'.
While highlighting the increasing commercial interest in cow's milk alternatives, Sabin acknowledged they will likely remain niche products.
"Goat's milk has gained momentum due to its health benefits, such as easier digestion," she said.
She added, however, that goat's milk products "will likely continue to be a niche market and be positioned as a specialty food."
"Camel milk products have been launched on the market in the USA, but I think this will remain a niche market due to its high price," said Sabin.
