Comax helps formulators tap into high-protein craze with new flavor masking technology to tackle off notes
Protein - especially the plant-based variety - is a hot trend in food and beverage formulation right now. But adding hefty amounts of it can make foods taste unpleasant, says Comax Flavors, which has launched a new ‘Protein Power’ flavor masking line design to tackle the problem.
Available in natural and natural & artificial variants, the flavors are engineered to mask the bitter taste that can be associated with soy, whey, lentil and pea protein, and can be used in bars, cereal, baked goods, shakes, dairy and non-dairy formulas and juice beverages, said Comax Flavors' corporate communications VP Catherine Armstrong.
