Blue Diamond unveils protein-packed almond flour
Last but not least we head to the global ingredients division of Blue Diamond Almonds, which has announced the launch of its first line of almond flour.
According to general manager Bill Morecraft, almond flour is “nutritiously superior to other processed flours” with each quarter cup serving containing six grams of protein, 3.5 grams of fiber and 75 mg of calcium.
“Additionally, almond flour is low on the glycemic index, is naturally gluten-free and a great food source of antioxidant Vitamin E,” added Morecraft.
There are three options: Extra Fine Natural, Extra Fine Blanched, and Fine Blanched, with applications including cakes, breads, crackers and muffins, coatings for fish and chicken, and thickening agents for sauces and soups.
