Florida Food Products offers natural gelling fibers
Florida Food Product’s FiberGel LC not only can replace as much as 100% of eggs in bakery products, but it can help products meet consumers’ growing desire for high-fiber and sustainable products, said Edgar Anders, executive VP for the Eustis, Fla., firm. He explained that the natural, multi-functional fiber is made from celery and citrus fruit biomass waste, and contains activated soluble and insoluble fiber that can thicken a wide range of products. Anders also noted that by including “fiber” in the ingredient name, manufacturers can retain a clean appearing label, which is increasingly important to consumers who are turned off by scientifically-sounding ingredients such as hydrocolloids, Anders said.
