Flint & Salt reduces lavender’s bitterness by regulating heat
Candy and cocktail syrup maker Salt & Flint infuses caramel with French Lavender by steeping the herb in cream before straining it and making the candy. To keep the herb from imparting its bitter overtones, the company founder said she ensures the cream does not become too hot while the lavender steeps. She also adds the herb to a Peach Lavender shrub for making cocktails and craft soda. She explains her shrubs are cold processed and sit for eight days to allow the vinegar and sugar to mellow and the fruit and herbs to settle and balance each other.
