Most people don't have a problem with gluten
In a session on gluten, Cynthia Harriman from the Whole Grains Council and Oldways observed that fewer than 1% of people have celiac disease, while the scientific literature suggests the percentage with NCGS/non-celiac gluten sensitivity ranges from 0.5% to 6% (although we can’t be sure because there are no validated biomarkers or diagnostic tests). In other words, she said, it appears that 93-98.5% of people can handle gluten just fine.
