He explained gourmet stores are more flexible than grocery stores in that they do not require brokers and are more receptive to trial goods, even though they prefer finished products. They also prefer innovative products and encourage marketing support such as demonstrations. As for margins, they take the same as grocers, but the distributor takes slightly more at about 30-40%, Kelleher said.
