Selling insects as food is like selling lobster as a delicacy
A pivotal component of the competition was to create applications that “are interesting and unique to get people to adopt it,” Welsh said. He is confident people will come around to eating insects just like they did lobster and crustaceans. He explained that 100 years ago lobster was fed to prisoners in Massachusetts and considered inedible by most people. But now lobster is a high-end culinary treat that sells for $20 a pound – which shows how perception can change in a short time.
