Making insects a family dinner
Students at the University of Wisconsin-Madison also used a familiar food – ground stew – as the basis for its canned Nu Stew, which incorporated spent silkworms. The chose silkworm pupae as an alternative to chicken because they have more protein, more fiber and less saturated fat. Plus it has minerals that are common deficiencies in their target populations in Kenya, Ethiopia and Uganda. The team won second place in the US and Canada division.
