Holy Cow! Jerky still a hot item on the snacks menu

There were at least 15 exhibitors selling jerky, and several more selling other meat snacks. Most emphasised their moist texture, culinary inspired flavor profiles, the absence of nitrites and MSG, and lower sodium levels. Beef dominated, but turkey, chicken and salmon products were on offer. Pictured is California-based Three Jerks, which uses only the "finest cuts of filet mignon" and is notching up triple-digit growth.
It has also recently secured a $100,000 cash injection from Shark Tank's Daymond John, who now has a 15% stake in the business.
