How can independent retailers compete with larger chains as they muscle into the natural and organic space? Michael Kanter at Cambridge, Mass-based Cambridge Naturals, said the key was delighting customers with instore theater, superior customer service, constant in-store sampling, stocking local products that are not available anywhere else, and regular engagement with shoppers on and offline.
Other successful initiatives at his store include regular 'staff picks', gift cards, a table by the bulk herbs where customers can chat and share recipes, regular staff training, and partnerships with other local businesses.
