Food is a vehicle for self-expression
In her presentation at Food Vision USA, Swette said Millennials were particularly receptive to the plant-based foods movement, in part because they were worried about the environment and keen to engage with brands with an animal welfare message or social mission, but also because they were looking for fresh culinary inspiration.
“The love of ethnic cuisine is also helping to drive plant-based eating,” said Swette, who noted that for the next generation, “Food defines who they are and what they value… food is a vehicle for self-expression.”
