Cultured egg white product taps into high protein, fermented, trends
'Eggurt' - a protein-packed cultured egg white drink with the consistency of drinking yogurt - is just a prototype, explains Shunsuke Ishida from egg product supplier Henningsen Foods. But as interest in protein, and fermented products, continues to skyrocket, there could be a commercial opportunity here, he predicts.
"We experimented with using yogurt cultures for the fermentation, and right now the product has water, sugar, milk, lactic acid, yeast extract and yogurt cultures in, but we could make dairy-free versions. We're also looking at different variants such as berries or banana."
