Edible bugs... what next beyond milled cricket powder?
Another headline-grabbing protein source - edible bugs - was also on the agenda at IFT, where Darren Goldin from Canadian bug powder supplier Entomo Farms told us it was still doing most of its business with snack companies, but envisioned a future where frozen raw insects (as opposed to the roasted and milled variety) were on the menu in US supermarkets.
"The raw cricket has a very different flavor profile and like any other meat I'd like to see this in the frozen food section like all of our proteins."
