Advantame in focus
At Ajinomoto, the prospect of added sugar labeling has prompted renewed interest in its high potency artificial sweetener advantame, which is sweeter than aspartame, and more stable. It also has a cleaner taste than sucralose (less of a lingering sweetness), claimed new product development director Dr Joseph Formanek.
For customers comfortable with using artificial sweeteners, advantame can also enhance flavors such as dairy, fruit, citrus and mint, extend chew time in gum, and mask off-tastes of proteins, vitamins and minerals, he added.
