Saturated fat and dairy
A lot of saturated fat comes from red meat and processed meat, and we’re told to eat less of that for many reasons. But it looks like dairy, particularly milk and yogurt, have positive attributes that protect against heart disease and are probably protective against colorectal cancer. But butter doesn’t seem to offer those protections. It seems to be other things in milk – the calcium, the proteins - that are helpful. Tom Sanders, King's College, London
