Demand for spicier foods continues to grow, along with interest in higher heat levels and different heat flavors, said Kalsec executive director, market development, Gary Augustine, who said the fastest growing peppers included peri peri, serrano, guajillo, anaheim, pasilla and arbol; while spices and seasonings showing strong growth included jamaican jerk, baharat and ras el hanout.
Globally, gochujang and sriracha were both demonstrating strong growth in condiments and sauces, followed by mole, harissa and sambal in the category, he said.
