New Yorker Randy Blaun has developed what she believes to be a more healthy French fry, which contains less than half the carbohydrate content of regular fries. Blaun currently has a patent pending for the invention.

Made predominantly with cauliflower, the fries contain only six to eight grams of carbohydrates, compared to over 20 grams in regular fries. They contain only a small amount of potato, and have as much fibre per serving as broccoli, Blaun claims.

Because of their constitution, Blaun believes the fries will be a hit with followers of the Atkins Diet, which encourages a high protein, low carbohydrate diet.
