More shelf stability from National Starch

Related tags Maize

ICI subsidiary National Starch has launched a new starch which it
claims delivers superior freeze/thaw and shelf-life stability.

Novation Prima is derived from waxy maize, and is said to be ideal for use in frozen foods and in applications where storage stability presents a particular challenge, such as fruit preparations.

In products requiring a long shelf-life and/or low temperature storage, the company claims that Novation Prima delays the onset of syneresis (the separation of a liquid from a gel) and gelling, while preserving end-product quality and premium texture.

Two products are currently available in the range: Novation Prima 300 and Novation Prima 600. These are comparable with the existing Novation 2300 and Novation 2600 products in terms of their use in processing and application - but are said to deliver superior end-product stability.

National Starch's Novation range of functional native starches is described as 'clean label' - in other words, it is ideal for manufacturers looking for a simple 'starch' declaration and EU classification as an ingredient rather than an additive.

Novation starches are also said to have excellent flavour release, allowing the inherent flavours of the recipe to prevail.

Novation Prima complements National Starch's comprehensive range of starches derived from natural sources. These include modified and functional native cold water swelling and cook-up starches which add value to manufacturers across a broad spectrum of applications.
