The company said that its new range has been successfully trialed in sugar-free boiled candies and in sugar-reduced beverages, dairy applications, ice cream and cereals.
The use of Reb A – the high intensity, zero-calorie sweetener derived from the stevia plant – has been associated with bitter or licorice flavors at high concentrations, as well as altered mouthfeel. Firmenich said it has analyzed chemical and flavor stability in applications “to recreate the authentic taste of sucrose.”
PureCircle and Firmenich first joined forces to provide customized flavor solutions for Reb A in January this year.
