Biothera’s Wellmune used in bread of Canadian retailer

The ingredient produced by Biothera is a natural carbohydrate derived from a proprietary strain of yeast that is said to offer immune health benefits. Metro has introduced its Life Smart Irresistibles line of approximately 20 artisan breads containing the ingredient. Wellmune has other applications in the bakery and snacks sector. It is also used in Groupe Biscuits Leclerc’s Praeventia cookies and bars in Canada. The ingredient has GRAS (Generally Recognised As Safe) status in the US and received novel foods approval in the EU late last year.
