One product that generated quite a buzz at the IFT show this year was NuBana green banana flour from International Agriculture Group (IAG). Elaine Watson caught up with VP marketing and business development (and resistant starch guru) Rhonda Witwer to find out more.

“Green banana flour is basically green ​[unripe] bananas that have been peeled and dried down into a flour product,” ​explained Witwer.

“It has the functionality of a starch and the label of a fruit. So you can put a fruit label into a starch application.

“You can replace flours and do very nice gluten free products, you can replace maltodextrin and xanthan gum and do great bakery products, you can use it in sauces and soups, anywhere you want the viscosity of a hydrocolloid or a flour, with a fruit label.”
