Chickpeas could take a more prominent role in PepsiCo’s snack portfolio given rising consumer interest in the legume, its environmental sustainability attributes and its versatility stemming from its mild flavor and diverse texture applications, according to company representatives at the Academy of Nutrition and Dietetics’ Food & Nutrition Conference & Expo last fall.
