Bettcher finds Whizard response for chicken carcases
Adapting existing technology designed for the removal of specified risk material, Bettcher has created a vacuum-based hand-held trimmer, which it said allows companies to extract more yield from chicken carcases.
Kevin Stump, product marketing manager for Bettcher, told Globalmeatnews.com that the Whizard Trimmer gave processors the chance to pull more whole protein from a stripped carcase rather than going down the MRM route.
“They can give the carcase one last pass with the trimmer and you have the potential to increase your yield and it’s great for companies looking to make chicken patties or nuggets.”
He said the application of the vacuum made it unique: “In the past, the vacuum was only used for inedible products, such as specified risk material, so we’ve put quite a lot of investment into creating a system which is applicable to the edible market.”
