Algae oil: The next big healthy cooking oil… made to order
If high oleic soybean oils garnered all the attention at the IFT show last year, all eyes were on Solazyme this year, which launched new AlgaWise high oleic algae oils (available via Bunge) boasting zero trans fat, low saturates and unprecedented levels of healthy monounsaturated fat.
They also have a clean taste, high smoke point and superb stability, enabling firms to avoid preservatives such as EDTA in applications such as mayo and salad dressings; extend fry life; and lower their carbon footprint, said Mark Brooks, senior vice president, Solazyme Food & Ingredients.
