Seven Sundays uses pumpkin seeds a nutritional powerhouse
Pumpkin seeds are emerging as a nutrient dense ingredient in several breakfast and snack foods, including Seven Sundays muesli cereals and new grab-and-go Coco Pumpkin Seed Muesli Square, said company Founder Hannah Barnstable. She explained that pumpkin seeds add iron and a “nutrient boost” to the cereals and bars. She added the seeds offer similar benefits as nuts but without the drawbacks. “It is hard to amp up with protein and vitamins and things with nuts because they are very expensive, and there are a lot of nut allergies. Pumpkin purees, pumpkins seeds are an economical way to boost nutrition in products,” she said.
