If grain-free is trending, on the flip side, so are ancient grains, notably higher protein, gluten-free grains such as quinoa, said Ardent Mills, which launched its Great Plains Quinoa at the show - an identity-preserved, golden variety grown on the North American plains, offering customers security of supply, a more consistent price, and high safety and quality standards.
The home grown quinoa, which is available in seeds, flour, puffs and flakes, has a neutral/nutty flavor and holds other flavors well, said the company, which said it is working with customers using quinoa in everything from snack bars and boxed quinoa to cold and hot cereal, tortilla chips, crackers, entrees and side dishes and salty snacks.
