Unripe green banana flour... a new string in the sugar reduction bow?
Moving onto the showfloor, one ingredient generating a lot of buzz was IAG's NuBana green banana flour, a neutral-tasting fruit powder that can be used to reduce or replace wheat or rice flour, maltodextrin, corn or potato starch, xanthan gum, sugar, and other ingredients in a wide range of applications from fruit roll-ups to gluten-free muffins.
