Gluten-free baker GreenLite - which recently struck a deal with Whole Foods' southern Pacific region in the US - uses corn, tapioca and potato starch to create its wares, which it claims have a superior texture to rival products.
GreenLite - which is also setting up a manufacturing facility in the UK market (which was recently abandoned by Boulder Brands) - will shortly be launching new products containing chia and teff flour in order to improve their nutritional credentials, said marketing manager Ofer Eliar.
