Sensient Flavors discussed the growing demand for using savory flavors in beverages, from African blue basil to chili peppers, pink peppercorn, and lemongrass. Meanwhile, the clean-label trend is prompting more formulators to seek out extracts, because some consumers are now wary of the term 'flavors' on pack, even if it is preceded by the word 'natural,' said Bill Smith, director, global beverage flavors R&D.
