What would a Thai yellow curry style BBQ sauce taste like?
A lively presentation from the Culinary Institute of America explored the question: 'Can we create a globally flavored BBQ sauce?'
In a bid to answer the question, Ted Russin, Christopher Loss and David Kamen, created and tested three ideas: A Jamaican/Caribbean-style BBQ sauce; a South East Asian style/Thai yellow curry-inspired BBQ sauce; and a Polynesian/Pacific tropical island-inspired BBQ sauce.
While all of them proved popular, the Jamaican BBQ sauce scored highest for overall liking in sensory tests, and showed that rather than homing in on specific ingredients such as lemongrass or peanut oil or molasses when developing new sauces, there is also potential in looking at whole dishes or cuisines for flavor inspiration, said the speakers.
"What would fried rice soup taste like? Or lasagne soup?"
