Despite confessing that his culinary skills did not extend much beyond "boiling an egg", PepsiCo's chief science officer - endocrinologist Dr Mehmood Khan - wowed delegates with a passionate speech about how the food system as we know it will have to change if we are to have any hope of feeding the predicted 9.5bn people that may be living on our planet in 2050.
