Finger on the pulse
We begin our gallery with pulses - beans, peas, chickpeas and lentils - which were a notable trend at Expo West this year, featuring in everything from snacks and dips to pasta, spreads, meal replacements and meat analogs. High in protein, fiber and micronutrients, pulses are gluten-free, non-GMO and bang on trend, according to Ingredion, which says there was a 74% increase in the number of new products launches featuring pulses between 2010 and 2014.
