Organic Valley takes on Fairlife with high protein, low sugar 'ultra-filtered' milk
Organic Valley is taking on Fairlife with a high protein organic milk. It begins with skim milk that’s ultra-filtered to remove some water and naturally occurring sugar (lactose), which concentrates protein and calcium levels. Lactase is then added to break down the remaining lactose into simple sugars. Fat is then added back to get 1%, 2% or whole milk.
The net result is lactose-free milk with 50% more protein, 45% more calcium, and 50% less sugar per serving than regular milk.
