Fat Cat’s srirachas ditch the preservatives
Orlando, Fla.-based Fat Cat Gourmet Condiments and Hot Sauces created two twists on sriracha – a “Siamese” Sriracha that tastes similar to the original sriracha, and a Bacon-Flavored Sriracha, which is made with animal-friendly ingredients and is vegan. The sauces also are preservative free, unlike other takes on the sauce, said the husband and wife company cofounders. They explained their versions don’t need preservatives because they are flash pasteurized and packed in high density polyethylene bottles that can withstand the heat during the filling process of the pasteurized sauce.
