Bekaplus DP 105 helps clean up processed cheese labels
ICL’s Bekaplus DP 105, an emulsifying salt launched in the last few weeks, helps block cheese shred more easily and retain its smooth creamy texture so that it is perfect as a taco topping, said Aunna Mesing, a food applications scientist at ICL. The ingredient also is phosphate free, which means it contributes to a clean label, Mesing added. The ingredient also helps cheese remelt multiple times.
