Fat is back
Healthy fats (and in some commentators' books that includes some saturated fats, not just the poly-, and mono-unsaturated variety), featured heavily at the show, from avocado-fueled mayo and dressings from Primal Kitchen, to butter coffee blocks, which feature coconut oil and clarified butter from grass-fed cows in sachets you add to your coffee for a satiating burst of energy in the morning.
