Dan Belliveau has his ‘Eureka’ moment in spring 2012, after six years as head of technical services at Starbucks.
“I was doing more and more work on the [coffee] wet milling process in the countries of origin and saw how few of them thought about the byproduct," he says.
"Then it was a matter of someone asking me and within a few seconds, I thought, ‘what if we made a food out of coffee cherries?’ Suddenly, my life changed.”
Today, he is processing the pulp into a protein-and fiber-packed gluten-free ‘flour’ that works well in everything from baked products to blended chocolate, beverages and fish sauce.
In case you were wondering, coffee flour doesn’t taste like coffee - more like dried fruit.
