Sustainability inspires salmon skin chips
Jerky does not have to be limited to meat, as demonstrated by Ruby Bay Smoked Seafood’s Salmon Jerky, which comes in peppered, teriyaki and orange ginger flavors. The all natural, smoked jerky is slightly more expensive than meat jerky, but also has premium positioning in outdoor stores and Whole Foods Markets, said Caitlin Bajo, a marketing and sales specialist that works with the firm. The company also is pushing the meat snack category’s boundaries with its Baked Salmon Skin Chips, which it tested on the Expo. Based on attendees’ reactions, the chips likely will not launch in the U.S., but rather in Asia, Bajo said.
