Convincing the next generation to eat bugs
Teams from the Universidad de Costa Rica scooped up the first and second place in the international category with their products aimed at children. First place with to Cricketa, a cricket-flour based cookie that also used sweet potato puree to deliver protein, iron and vitamin A to children in Costa Rica. Second place when to Molibannann, which is a dry mix combining plantain and Tenebrio molitor larvae flour that can be used to make cost effective, protein-rich croquettes for Haitian children.
