Almond protein
Plant-based protein was also a hot topic at IFT, with Blue Diamond introducing proteins made from expeller pressing almonds to remove the oil, partially defatting the remaining cake, and milling it to create a fine powder with 41% protein (using almonds with the skin on) and 45% protein (using blanched almonds).
The powder is an excellent source of magnesium, phosphorus, manganese, copper and biotin, and a good source of protein, fiber, potassium, calcium, iron, and zinc.
